Carrot Soup with Orange

As a health coach, I wish I could say that my son is eating everything I cook! The truth is, like most people, there are some veggies he will eat and some he won’t. 
 

At dinner, the last thing I want is a whining child. So I choose to cook the vegetables I know he will most likely approve of. Lucky me, carrot is one of these vegetables :)

Try this soup recipe that my kiddo has recently deemed “yummy”!

prep time: 5 min cook time: 15 min

Ingredients:

  • 12 carrots

  • 2 onions

  • 16 oz beef bone broth

  • 1 orange

  • Cumin powder

  • Cilantro

  • 2 Tbsp sour cream (optional)

Directions:

  1. In a large pot, heat the olive oil on medium and sauté the chopped onions.

  2. Peel and chop the carrots, add them to the pot. Add the bone broth, cumin powder and chopped cilantro. Add the orange juice and grated zest.

  3. Cook for 15 min. Transfer to a blender and add sour cream (optional). Mix well and adjust seasoning before serving.
