With summer approaching, you’ll find the first zucchini, tomatoes, basil and melon at the farmer’s market… Here’s what I put together with these delicious ingredients!
Ingredients (serves 2):
30 basil leaves
1 cantaloupe melon
20 cherry tomatoes
1 tsp oregano
8 Tbsp olive oil
For the zucchini soup: Wash, peel and chop zucchini. Transfer to a pan and cover with water. Boil for 10 min. Add 4 Tbsp olive oil and about 10 basil leaves. Mix thoroughly in a blender. Season with salt and pepper. Can be served immediately or well chilled (like a Gaspacho!).
For the side salad: Cut melon in cubes and tomatoes in half. In a large salad bowl, mix melon cubes, tomatoes, oregano and 4 Tbsp olive oil and 20 chopped basil leaves. Season with salt and pepper. Enjoy!
