Prosciutto Ham and Goat cheese Stuffed Tomatoes
4 large tomatoes
4 prosciutto ham slices
1 (5 oz) goat cheese log
Preheat the oven to 400 F.
Cut the tomatoes' hats and empty them. Cut the goat cheese log into same size slices.
Fill the tomatoes with a slice of ham and a slice of goat cheese.
Place the hat on top of each tomato and bake for 20 min.
Add pepper and fresh herbs. Serve with a drizzle of olive oil.
Crispy Zucchini Fries
2 large zucchini
1/2 cup panko bread crumbs
2 Tbsp grated Parmesan cheese (optional)
1/2 tsp dried basil
salt and pepper to taste
2 tablespoons olive oil
Pre-heat oven to 425F. Line a baking sheet with parchment paper and lightly grease with oil. Set aside.
Beat the egg in a small shallow bowl and set aside. Combine the breadcrumbs, basil and parmesan cheese in another bowl and set aside. Prepare zucchini by trimming the ends and cutting into 1/2 inch strips.
Dip zucchini strips into egg mixture then in the breadcrumb mixture and transfer to baking sheet. Repeat until all the zucchini strips are coated with egg and breadcrumbs.
Season with salt and pepper then drizzle with olive oil.
Bake in the preheated oven, until golden and crisp, about 30 to 35 minutes. Enjoy hot with your favorite dipping sauce!
